Chicken Divan from Aunt Carol's Cookbook

Here's a book that's been serving me well for... well, I guess since 1979.

Geez, I wasn't even 30 then. Tells you how long I've kept it, used it and loved it.

Given to me by my Aunt Carol, all those years ago, it's filled with comfort food & 50's recipes from her fellow church ladies.

Passing on the jello & chip dip, I've turned to this little lovely time and time again, but my hands down flat out favorite recipe from the book (and made more than times than my current age) is ...

Chicken Divan

It's a go to dish that works for an everyday meal, but impressive enough to serve to guests for a family gathering or casual dinner party.

A great "starter dish" for the hesitant hostess. Add a simple green salad, a french baguette and dinner is done!

An added plus is that you can prepare most of it early in the day and then store it in the refrigerator until it's time to bake. Any recipe you can make ahead is a must for me!

Hope you try it... I know you'll love it.

Chicken Divan

Ingredients:

4 Boneless Chicken Breasts or 8 Chicken Tenderlions

1 ½ Cups Fresh Broccoli

¾ Cup Mayonnaise

1 Can Cream of Chicken Soup

½ to 1 Cup Milk (depending on how thick you want the sauce)

½ Cup Chopped Onion

¾ Cup Chopped Celery

2 Slices Bread (toasted and cut into croutons)

*I usually use plain white bread, but whole grain is good, too.

½ Cup Shredded Cheddar Cheese (or more if you like)

1 Slice Swiss Cheese (torn into small pieces)

1 Tsp Lemon Juice

2 Tbls Butter

Olive oil

Directions:

Simmer chicken breasts in water until thoroughly done.

Sauté onions & celery in olive oil until slightly tender.

Combine mayonnaise, cream of chicken soup, milk, sautéed onions & celery & lemon juice in mixing bowl.

Spray 9”casserole dish with non stick cooking spray.

Place chicken in bottom of casserole dish.

Layer broccoli evenly over the chicken.

Pour soup mixture over the top.

Bake at 350* for 25 minutes. (I cover it with foil)

While it’s baking or earlier in the day...

Toast the bread. Let it cool, then cut into crouton size pieces. Melt the butter, then pour it over the toasted croutons and mix well.

When 25 minutes is up, add the cheeses on top, then the croutons.

Bake for another 5-7 minutes uncovered until cheese is melted and croutons are golden brown.

Serves 4

Double the recipe and use a 9x11 casserole dish for 6-8 servings.

Simple Summer Napkins

Here's a simple DIY project

to dress up your Summer table.

I started with these.

Cotton Dish Towels. Yes... Dish Towels.

I think 100% Cotton works best for making napkins.

I actually picked 4 of these up at the Dollar Store.

Each towel will make 2 napkins.

$4.00 for 8 napkins, how's that for a deal?

Fold each towel in half and cut along the fold.

Now you've got 2 pieces with one unfinished edge.

Fold the unfinished edge over 1/2 inch.

Then fold over 1/2 inch again.

Press and sew down the hem.

If I've completely lost you using the word SEW...

You can easily use iron on fusible hem tape.

Voila!

Easy breezy. Pretty and practical.

Cotton dish towels wash up easily, and the more you

wash them, the softer they get.

They come in so many colors and patterns

the possibilites are endless.

So grab a towel and and set the table!

Gilda's Club of Metro Detroit is gearing for their biggest fund raiser of the year this Thursday night May 19th. This year's theme "Bands, Boots & Barbeque." Guests will be entertained by a battle of the bands competition performed by local country/rock musicians. Enjoy a delicious BBQ cook-off prepared by the area’s finest restaurants, live/silent auctions and many more surprises.

Hearty Hamburger Soup

Here's a soup that doesn't require hours of simmering on the stove! My family's favorite because it's so satisfying and seriously delicious. My favorite because it's such a quick dish! If you have all the ingredients on hand you can whip this up in less than hour. Paired with breadsticks or a crusty loaf of bread you can have dinner on the table in no time flat!

Ingredients:

1 LB Ground Beef

4 Cups Water

1 Can (14-1/2 oz) diced or regular tomatoes

3 Medium carrots sliced

2 Medium potatoes, peeled and cubed

4 Beef bouillon cubes

1 Cup fresh,f rozen, or canned green beans

1 Medium onion chopped

1-1/2 Tsps salt

1/4 Tsps pepper

Directions:

In large sauce pan, brown ground beef, drain.

Add remaining ingredients, bring to a boil.

Reduce heat and simmer for 25 minutes or until potatoes and carrots are tender.

Serves 6

*Tip:

You can also use beef broth, and add more or less water as needed.

*Variations:

Mix it up by combining the ground beef with ground Turkey Italian Sausage.

Substitute the ground beef with ground turkey.

Any combo of vegetables are tasty in this soup. I've made it so many times and have included peas, cabbage, celery, and even tiny pasta.

*Hostess Hint: This soup makes for a great last minute meal when you have unexpected company for dinner. (I always try to keep the ingredients handy in the pantry) Toss up a fresh green salad, bread or rolls, and you have an instant hearty dish to impress your guests!

Christy's Oriental Chicken Salad

I was lucky enough to discover this scrumptious grilled chicken salad when my sweet friend Christy served it several years ago. It was love at first taste and has become one of my favorite go-to dishes ever since.

I recently served it over the holidays to our weekend guests and once again it was a huge hit and a nice change from all the heavy holiday food. I love that everything can be prepared ahead of time leaving you free to concentrate on your guests and be the perfectly hip hostess!

I like to serve all the accompaniments in individual dishes and let my guests help themselves. Pretty presentation for a buffet or simply set everything in the middle of the table for a family style meal.

Christy's Oriental Chicken Salad

Dressing

3 TBS Honey

1 1/2 TBS White Vinegar

4 TBS Mayonnaise

1 TBL Dijon Mustard

*1/8 TSP Sesame Oil

*This is very strong flavor so I only add a drop at a time & taste in between

Blend all ingredients with whisk. Store in refrigerator till ready to serve.

May be made a day ahead.

Salad

2-4 Boneless Chicken Breasts (skinless)

3 Cups chopped Romaine Lettuce

1 Cup chopped Red Cabbage

1 Cup chopped Napa or Savoy Cabbage

1 Cup chopped Green Onions

1/2 Cup sliced Almonds

1 Cup Chow Mein or Rice Noodles

1 can sliced & drained Water chestnuts

Cut chicken into cubes.

Grill the chicken with olive oil, add salt & pepper to taste.

*You can easily do this earlier in the day and store in refrigerator.

Toss lettuce and cabbage together.

Place green onions, almonds, noodles, & water chestnuts in separate dishes.

Serve dressing on the side.

Now for the perfect ending...

My French Mother- in- law's

Fresh Orange Salad

Simply peel and slice fresh Navel Oranges.

Add a few teaspoons of sugar to taste and a splash or two of this...

Gently combine the oranges, sugar and Grand Marnier.

Let is sit for a bit and serve at room temperature.

Voila! A tasty, fresh & impressive meal with little effort & big impact.

Vintage Baby Love

Our family will soon be blessed with a little bundle of joy and thought I would share the "Baby Shower" I hosted for our daughter over Thanksgiving weekend. She and our son in law are expecting a baby girl and we are just tickled pink!

My daughter and I collaborate on almost everything, but this time I kept the details to myself so when she arrived it would all be a suprise. She knew the day & the time, but that was it. I knew she loved soft colors, simple looks, and vintage elements, but I also wanted to include a bit of the "bird on a branch" theme she is using in the nursery.

The setting could not have more perfect. A restored victorian home on the grounds of a local golf course, now a restaurant and banquet venue. The room was overflowing with charm: exposed brick walls, painted white windows and columns, brass sconces and beautiful upholstered chairs. It was almost too good to be true.

After making way too many trips to thrift stores, searching and shopping on Etsy, and let's not even talk about all the Rustoleum "Blossom White"spray paint, I was able to get the exact look I wanted and hoped my daughter would love.

Here's how it all came out with a few tips on where to buy and how-tos.

The seating cards were simple tags tied with ribbon and then hung from a branch I found in the woods. The ribbon I used was actually Wright's hem tape available at most fabric stores. Since I needed a bunch I ordered it HERE I learned how to give the ribbon that vintage crinkled look HERE

This little alcove was the perfect setting for the sweets table. The "bebe" letters were my version of something I saw on Martha Stewart. You'll find it HERE

I found the sweet vintage baby cards HERE on Etsy

Ribbon trimmed Cake Pedestals from Home Goods made pretty little centerpieces and whoever had the most pennies in their purse, got to take it home. I covered a block of styrofoam with reindeer mose, then added a miniature crib I found HERE The birds were another great catch from numerous goodwill hunting trips. Along with the cribs, they got a nice coat of "Blossom White." Voila! Instant upcycled elegance!

All the ladies went home with one of these little lovelies:

Charming key chains made from vintage silverware. I think this was my favorite element of the shower and they were such a huge hit with our guests. Each included a card with the pattern name and date it was introduced. The shop owner at Mon Petit Chou Boutique did a custom order for me and was so sweet to work with. She also crafts the most exquisite vintage jewelry.

The favor boxes were simple chipboard, topped with a little ribbon & vintage look "Merci" cards. Little effort, big impact & I loved the look! Another great Etsy find:

Such sweet memories. My loving grandmother made this

dress for me 50 plus years ago. Fine organdy with delicate little pink rosebuds.

I wore it, my daughter wore it, and now our sweet little

granddaughter will soon wear it too.

We only played 2 games. I tried to keep short & sweet.

"Tiny Babies"

I couldn't resist swaddling them up nice & cozy. As they arrived, each guest picked a baby, but they could not leave their baby unattended. Not for the bathroom,or the buffet line. Nor could they say the word Baby. If they did they had to give up their baby to the guest that caught them in the act. Of course, the lady with the most babies at the end of the shower won the prize. A lot of fun, and a lot of laughs.

This one is pretty self explanatory. Guess how many...

I cleaned out some olive oil bottles, topped with muslin and ribbon. My daughter actually took these home and has them in the nursery.

Just as my grandmother did, and my mother still does for me, from mother to daughter, this truly was a labor of love.

Easy Last Minute Holiday Ideas

OK, so the Christmas countdown begins and we're all racing to the finish line. The last minute Holiday rush can have us all feeling frazzled, but there's still time to whip up something with a "Wow" factor. Here are some ideas that are low on effort but high on impact!

Savory Shrimp Spread

This recipe was given to me by a neighbor years ago and it's been my go to dish ever since. With just a few ingredients, it's quick to fix and is sure to be a hit with the holiday crowd and a party pleaser any time of year. Get ready for recipe requests!

Ingredients:

(1) 8oz brick of cream cheese softened

(1) stick of butter softened

(2) 4oz cans of tiny shrimp (rinsed & drained)

(1) medium to large onion finely chopped

Blend cream cheese and butter.

With a fork throughly mix in onion & shrimp.

Serve with assorted crackers, bagel crisps etc.

Keep refrigerated until ready to serve.

*This makes a lot and will easy serve a crowd of 20,

for smaller gatherings cut the recipe in half.

Pretty Palmiers

My french Mother-in-law used to buy these at a local french bakery. Named "Palmiers" as they resemble the top of a palm tree, I love the crispy texture, not too sweet taste and delicate look. I'm getting pretty brave with baking lately and actually decided to tackle these this year. I could not believe how easy they were to make! No mixing, no measuring... just roll, sprinkle, cut and bake!

Backyard Bouquets

I have a thing for fresh flowers. Absolutely love them. I mean really who doesn't? After we moved into our cozy little cottage in the north country of Michigan last year I was so inspired to bring fresh flowers into the house to reflect all the natural beauty surrounding us. I made an effort to pick up fresh blooms now and again at the grocery store. Even indulged myself once or twice at the pricey local florist. But it was for the most part a half-hearted attempt, and only when we were expecting company.

Then I came upon a post by my lovely and gracious Twitter friend Wenderly. Her New Year's resolution was to always have fresh flowers about the house. Taking her lead I made the same vow and quickly discovered that incorporating fresh into your routine is surprisingly not that difficult, and so worth the effort!

So here are the results of my Summer quest for fresh!

I started my mission in June with this 5 dollar grocery store bouquet...made a bit more interesting with a few sprigs of fake.

Another fresh from the store find added a touch of charm to a ladies lunch.

But as Summer approached... I decided no more store bought blooms.

I would limit my flower picking to my own backyard. But planting anything on this rocky slope has been to say the least: challenging. Our backyard garden is still a work in progress & not exactly a bounty of botanical beauty...

I was limited to a very few pretties gracing the landscape and at times it was slim pickings.

But I was blessed with an abundance of these beauties...

and a few of these pretty petals planted last Spring.

I found these simple leafy branches...

a trio of tiny vases...

and a bit of garden ivy made for some elegant understated centerpieces.

Just the look I was going for.

I even decked out the deck...

with absolutely anything

and everything I could pick, pluck or cut!

Whatever even resembled a flower was fair game to me.
My friend asked if this was a bucket of weeds.

The front entrance table became a focal point of fresh...

and the first thing to greet the flurry of friends & family

who stayed with us this summer.

Changing blooms from one week to the next...

I love the way they say "Welcome" without saying a word.

So there you have it, my backyard bouquets!

And though it's now time to open the door to Autumn...

I've kept a few of these hanging around to remind me of Summer past.

I'm a "joy of cooking" kind of girl. I can pretty much whip up a killer quiche, make a mean meatloaf, or serve up a soup to feed the soul. But I can't bake. I don't bake. Don't ask me to bake. Not unless it comes out of a box. So when I was invited by Staci Edwards of Staci Edwards Design to join her Blog-n-Bake challenge, my first reaction was: Bake cupcakes from scratch? Not in this lifetime. The Challenge: pick a cupcake to make from a list of heavenly treats from Ming Makes Cupcakes. Since I've heard baking is a science I measured out everything precisely.

Was happy to discover a little cooking was involved.

Put the little lovelies in their place.

Behold...we have Cupcakes! Now time to pretty them up.

I was pleasantly suprised to find baking from scratch is an absolutely joy! Now I get it and I'm a believer. There may be no stopping me now! The best part: they were luscious. A big bouquet of thanks to Staci and Ming for bringing out the baker in me!

"Up North" Cherry Chicken Salad

Here in magnificent Michigan anywhere North of the middle of the mitten is "Up North" and that's where you'll find Michiganders going Cherry Crazy each and every July at the National Cherry Festival in the charming lakeside resort town of Traverse City.

At nearly every local restaurant and deli you will find some kind of Cherry Chicken Salad on the menu. It's like a Northern Michigan Summer staple. After sampling my share and with all the house-guests we have in Summer I decided it was high time for this hostess (trying to be hip) to make this at home.

Served up as a sandwich...

or piled on a plate of greens from the very first bite, this just says Summer!

This recipe is a variation of many I've found. They're basically the same with a bit of optional ingredients here and there. So here's The Hip Hostess version:

UP NORTH CHERRY CHICKEN SALAD

Serves 6

4 cooked & diced boneless chicken breasts

1/3 cup dried cherries

1/2 cup diced celery

1/3 cup chopped pecans or walnuts

½ cup mayonnaise

2 tablespoon buttermilk*

1/2 teaspoon salt

1/2 teaspoon ground black pepper

*If you don’t have buttermilk on hand you can substitute

1 tablespoon lemon juice or vinegar plus enough milk to make 1 cup

*For this recipe I just added ¼ tsp lemon juice to the milk.

Optional ingredients:

1/3 cup diced apples

1/3 cup diced pears

¼ cup green scallions

¼ cup fresh parsley finely chopped

Directions:

This is so easy breezy; just mix the cooked chicken, dried cherries, celery, nuts, and any optional ingredients. Add the milk and mayonnaise and toss well. Keep in the fridge until nicely chilled. This recipe can be made a day ahead, in fact it’s even better the next day. Serve as a main dish salad on a bed of fresh greens, or as a sandwich on a croissant, or whole grain bread. This also makes a super summer appetizer when served on crackers or crostini.

By the way, just wondering.... do other states use the phrase "Up North" too?

The Hot (and I mean HOT!) Summer weather we've been having up here in the North Country has got me into Summer salad mode and searching for some cool, new salad recipes. Which got me to thinking about all the different ways to serve salad...

Adhereing to the "play it safe" policy that simple is always best, salad has always been served at our house on chilled clear glass plates a la restaurant style. Now that's for guests, for everyday salads it's in a salad bowl & then onto the dinner plate. Like I said, I like simple.

My french mother-in-law always serves the salad last! Right after the main course but before dessert. And always, always with a plated arrary of cheese. I guess it's french thing. After a few years and lots of meals at the in-laws I started to follow her lead, I mean after all... she was french! It seems the French have it right when it comes to serving salad. A fresh plate of greens with a bit of brie after a meal is surprisingly refreshing and our guests seem to love this reverse approach to serving salad. One more culinary tip to thank my mother in law for.

This weeks theme is about aprons in the kitchen,

so I was delighted when she invited me to link up with her and share...

a bit about me and my aprons...

When Sandy asked for a picture of me in an apron I suddenly realized I didn't have one. Really. At least not one fit to post. Didn't think I would have the time this weekend as we were expecting company but... as I was tidying up the kitchen and calmly waiting for our guests to arrive a moment of panic set in. I had completely forgotten to make the French Apple Tarts I wanted so desperately to make. I bought all the ingredients, was all geeked up to bake, but I must have filed it in my head and then completely lost it. My baby boomer brain is losing cells by the minute I swear.

Now let me just say I love to cook but, I am NOT a baker, can't bake my way out of a paper bag so this was a huge challenge for me, but I was determined to make those darn tarts come hell or high water! I threw on my apron and figured it would all be so charming if my guests arrived while I was in the middle of baking. You know the hip hostess thing? Lightbulb moment.

I yelled to my husband "Get the camera and take a picture of me!" His reply:"What? Why?" Because hey, I had my apron on, more importantly I had make up on and I wasn't having too bad of hair day. He snapped a few shots and this one was the winner, although as Nora Ephron would say "I feel bad about my neck."

The darling daughter and I generally think alike

but she always goes for a much more glamourous approach.

I know this isn't breaking news but I love aprons and love to wear them. A lot. In fact to me being in the kitchen without wearing an apron is like driving without a seat belt. Seriously, something just doesn't feel right about it.

Do I have a favorite? Well that's kinda like asking me which is my favorite child, but if you really have to know I do admit to being slightly (OK a lot) partial to my Demi Style Black a la Mode.

As you might be able to tell from the kitchen and my wardrobe, I'm pretty much all about black and white. Here's a peek of my aprons at home.

I hate to bring up the "I" word here, but I IRON

but I'm just weird like that.

Taking our Show on the Road

Last month Mother & Daughter packed up our dazzling domestic attire, hit the road and headed to two of Northern Michigan's trendy hot spots. Yes, there really are some hot spots up here. Since we live between the two, I guess we didn't actually "hit the road"... just went down it.

First stop, Sea side in Charlevoix!

This lovely little resort town is nestled between Lake Michigan and Round Lake. Come Summer this place comes alive with seasonal residents, tourists, boaters, campers and lucky for us, tons of shoppers!

Part of the charm of Charlevoix is the drawbridge right in the middle of downtown. The bridge goes up at the will of the numerous sail boats making their way to and from Lake Michigan. It's quite a charming site to see these magnificent boats making their way down the channel. Maybe not so charming is waiting in traffic for the bridge to go back down. But who cares, it's Summer, right?

Setting up Shop in Charlevoix

While pitching our fashionable frocks we were tickled pink to meet up with a multitude of Makers, countless Bakers, and quite a few Fakers all looking to sport a hip little apron! We had tons of fun!

Next stop... The Beautiful Village of Bay Harbor

Hard to believe until the early 80's this area was home to the Portland Cement Company. In 1993 the area was transformed into the beyond belief resort it is today. Visitors can partake in all this beauty by the bay while swimming, biking, hiking, golfing and for the less energetic crowd there's shopping, dining or just laying on the beach and taking in the spectacular sunsets. A little bit of heaven right here in Michigan.

Our booth was near downtown Bay Harbor and

right along the water in the Marina. Beautiful but breezy.

By the way...The best part of the village:

The Inn at Bay Harbor

In our humble opinion, hands down, flat the most gorgeous place on earth.

Who knew this glistening little jewel was sitting on the shore of magnificent Lake Michigan?

We certainly did not...until four years ago. That's when this very spot was the setting for the darling daughter's wedding. No matter how much we visit, this little slice of heaven always takes our breath away!

How lucky are we... Mother & Daughter doing business by the Bay!
